Recipe: Nigerian Meat Pie Filling

Nigerian Meat Pie Filling

450g minced beef
3 carrots, peeled and sliced into rings
1 tsp hot chilli pounded to a paste
1 tsp ground cinnamon
1/2 tsp black pepper
1 tbsp parsley, chopped
1/4 tsp ground cumin

Combine the beef and spices in a pan, cover with water, bring to a boil
then reduce to a simmer, cover and cook for about 20 minutes, or until the
meat is tender. Add the vegetables at this stage and add a little more
water if needed. Bring to a boil, reduce to a simmer, cover and cook for
about 20 minutes or until the vegetables are tender. Remove the lid and
allow the mixture to boil until almost dry.
