Sylvia's Avocado Salad

2 avocados, halved, pitted, peeled and diced
1 medium tomato, diced
3/4 cup coarsely chopped fresh cilantro
1/2 cup finely diced onion
2 teaspoons finely chopped jalapeño
1-1/2 tablespoons fresh lime juice
1/2 teaspoon of salt

In a medium bowl, combine avocados, tomato, cilantro, onion and jalapeño. Add lime juice and salt; mix well. Cover and chill for at least 30 minutes.
Serves: 6 (about 3 1/2 cups).


Serve this flavorful salad on a bed of mixed greens or in a large lettuce cup for a light lunch. It is also excellent with grilled meats and your favorite burgers.
