NeanderThin Barbecue Sauce

The crown jewel of the NeanderThin kitchen.

2 cloves garlic, minced
2 tablespoons finely chopped onion
2 tablespoons bacon fat
1 teaspoon chili powder, or more to taste
1 teaspoon dried rosemary leaves, crushed
1/2 teaspoon coriander seeds, finely ground or crushed
1 teaspoon ground ginger
One 6-ounce can tomato paste
1/2 cup water, or more if needed
6 ounces 100% natural apple juice concentrate
Juice of 1 orange (1/3 to 1/2 cup, more or less)

1. Sauté garlic and onion in bacon fat over medium-low heat until
tender, 5 to 10 minutes.
2. Add chili powder, rosemary, coriander, and ginger.
3. Add all other ingredients and stir until well blended.
4. Cover and simmer over low heat for at least 30 minutes to let
flavors blend. If sauce becomes too thick, add more water.
