Hot Spanish Squid Soup ---------------------- 1 lb Squid; cleaned, cut into- 1-inch pieces 1 tb Olive oil 2 cl Garlic; minced pepper to taste 1/2 c Tomato sauce; or puree (I suppose we could change the tomato sauce to tomatoes?) 1 c Water In a saucepan, heat oil and garlic, but do not let garlic brown or burn. Add squid, pepper, tomato sauce and water. Simmer mixture for 1 hour, adding more black pepper towards the end of cooking time. |
