Baked Stuffed Breadfruit (St. Lucia) ------------------------------------ chives 1 clove garlic 1 onion chopped 1 tomato chopped whole breadfruit salt and pepper to taste 3/4 pound of minced meats Parboil the breadfruit in the salted water. Saute onion, garlic and chives in oil, add meats and lightly fry, add tomato, salt and pepper. Peel and core the breadfruit, fill with the mixture, now brush with the oil and bake in a greased dish in a moderate oven for at least 30 minutes, basting from time to time. Serve hot.
