Carrot Salad
------------
1/4 cup NeanderThin mayonnaise
3 tablespoons fresh lemon juice
1 tablespoon pure maple syrup
1-1/2 pound carrots, peeled and grated

Mix mayo, juice, and syrup in a small bowl. Add carrots; toss to mix.
Let stand at room temperature for one hour and then serve.
