Cauliflower Tabouli

1 1/2 Lbs cauliflower florets
1/2 cup parsley (VERY finely chopped)
1/2 cup fresh mint (very FINELY chopped)
1/2 cup chopped red onion (about half a fist size onion)
4.5 to 5 Tbls fresh lime juice (about 2 fruits)
2 Tbls olive oil
1 teas salt
1 teas black pepper
1/3 cup pine nuts [optional]

In a food processor (NOT A BLENDER) pulse cauliflower until it looks like rice. Set aside in serving bowl

In food processor- blend parsley, mint, onion, lime juice, olive oil, and salt and pepper into a smooth paste.

Pour over cauliflower and blend well. Using a spoon pour raw pine nuts into mix and stir well.

Serving Size: Makes Ten 1/2 cup servings.
